Tofu, honey, cinnamon and berries on toast


This is a delicious light breakfast, lunch or snack at any time of the day. Nutritionally very well balanced and providing the essential protein many vegetarians stuggle to get. Also, it is low in fat yet very tasty. It is also quick easy to make! You can't go wrong!

  • 2 x wholegrain bread
    100g tofu / beancurd
    Squeeze of honey to taste
    Pinch of cinnamon
    Berries (optional)


  1. Par-toast bread on one side under pre-heated grill. Drain tofu and cut into thin slices Lay on untoasted side of bread. Sprinkle on cinnamon and drizzle over honey. Put under grill for about 3-5 mins to warm tofu and finish toasting bread. Serve sprinkled with berries and an extra drizzle of honey if you fancy!
