    Vegan banana chocolate pancakes

    Vegan banana chocolate pancakes

    Ingredients

    100g self-raising flour
    2 tbsp Food Thoughts Organic Cacao Powder
    2 tbsp icing sugar
    150ml Alpro Organic Soya
    ½-1 tsp vanilla bean paste, to taste
    1 large ripe banana, mashed
    Vegetable oil, for frying

    For the topping
    1 tbsp Food Thoughts Organic Cacao Powder
    1 tbsp icing sugar
    50ml Alpro Single Soya
    Banana, sliced, to serve

    Method

    1. Start by making the sauce for the topping. In a small saucepan, whisk together the cacao powder, icing sugar and single soya. Set aside until ready to serve.

    2. For the pancakes, whisk together the flour, cacao powder and icing sugar in a mixing bowl. Whisk in the organic soya and vanilla paste until combined, then stir in the mashed banana.

    3. Heat a splash of oil in a large nonstick frying pan over a medium heat. Use a piece of kitchen paper to wipe the oil over the pan, until coated all over but not too oily. For each pancake, add 2 spoonfuls of the batter and cook for 1-2 minutes until bubbles appear on top, then turn and cook for 1-2 minutes on the other side. Cook in batches until you have 6 pancakes.

    4. Gently heat the reserved sauce until warmed. Arrange the pancakes on plates, top with sliced banana and spoon over the sauce to serve.

    Cook’s tip You can swap the icing sugar for maple syrup in this recipe, whisking it into the pancake mixture with the soya drink.
