Vegetable tart

320g pack Jus-Rol Puff Pastry Sheet
25g essential Waitrose Parmigiano Reggiano, finely grated
1 essential Waitrose Courgette, sliced
1 essential Waitrose Red Onion, sliced
2 essential Waitrose Peppers, cut into chunks
75g Cooks’ Ingredients Sundried Tomato Paste
1 x ½ x 25g pack fresh basil, shredded


1. Preheat the oven to 200°C, gas mark 6.

2. Unroll the pastry sheet and place on a baking tray. Scatter with half the Parmigiano cheese.

3. Mix together thevegetables and tomato paste and spread over the pastry leaving a 2cm gap round the edges. Scatter over the remaining cheese and basil and bake for 20 minutes until golden.
