Warm Curried Chicken and Mango Salad

A nice, indulgent, healthy and speedy lite meal


  • 1 tblsp olive oil
    1 pack waitrose fresh mini chicken fillets
    Medium ripe mango
    1 tub half fat creme fraiche
    2 tblsp curry powder
    serve with
    warmed wholemeal pitta bread
    fresh green mixed leaves


  1. fry the chicken fillets with the olive oil
  2. meanwhile chop the mango into small cubes and place in a saucepan with the creme fraiche and curry powder and heat gently stirring season
  3. lay the salad leaves on a plate and add the chicken fillets, spoon over the mango and curry sauce
  4. serve with warmed wholemeal pitta bread and salad leaves
