Warm Fig Balsamic Focaccia

Serve two slices per person.
Ingredients

1 loaf of Waitrose Rosemary Focaccia

Olive oil

Aged balsamic vinegar

Fresh figs

Slivers of Dolcelatte or Roquefort Cheese
Method

Preheat the grill. Cut a loaf of Waitrose rosemary focaccia into thick slices. Toast these lightly, brush each with olive oil and then with aged balsamic vinegar. Top with overlapping slices of fresh fig (trim off the tough bit of the stem before slicing).

Then add a few slivers of Dolcelatte or Roquefort cheese, arrange on a grill pan and grill until the cheese is bubbling. Serve for breakfast or as a light lunch, with a plate of parma or serrano ham and a mound of tangled roquette.
