Warm lentil and green bean salad

185g puy lentils

2 tbsp extra virgin olive oil

1 lemon, juice

2 tsp red wine vinegar

½ tsp caster sugar

200g green beans, trimmed and halved

20g pack flat-leaf parsley, roughly chopped


  1. Put the lentils in a saucepan with 750ml water and bring to the boil. Reduce the heat and simmer for 15–20 minutes, or until tender, then drain.
  2. Whisk together the olive oil, lemon juice, red wine vinegar and sugar in a large serving bowl and add the hot lentils.
  3. Blanch the green beans in a pan of boiling water until just tender – about 2 minutes. Toss the beans into the lentils, along with the chopped parsley, just before serving.
