    Warm Smoked Mackerel and New Potato Salad

    Serves: 4


    750g essential Waitrose new potatoes, quartered

    3 tbsp Waitrose mustard and honey dressing

    2 tsp extra virgin olive oil

    50g wild rocket

    300g essential Waitrose hot smoked mackerel

    1 shallot, finely chopped

    2 tbsp snipped chives



    1. Put the potatoes in a pan and cover with boiling water. Simmer for 10–12 minutes until tender, then drain. Stir in the mustard and honey dressing and leave to cool for 5 minutes.

    2. Meanwhile, toss the olive oil with the rocket, then season and divide between 4 plates.

    3. Skin the mackerel, break into large flakes and stir into the potatoes with the shallot and chives. Add to the rocket and serve.
