Wild Garlic, Salmon and New Potatoes

Ingredients

500g new potatoes, scrubbed

2 mint sprigs, leaves roughly torn

2 tbsp extra virgin olive oil

A good handful of wild garlic leaves, freshly picked

600g salmon fillet, skinless
-
½ tbsp wholegrain mustard
Method

Boil the potatoes for 15 minutes with the mint and a pinch of salt. Drain.

Smear the salmon with ½ tbsp olive oil and season.

Heat a frying pan until hot and cook the salmon for 2 minutes on each side so that it is still slightly rare. Cool slightly, then break into chunks.

Heat the remaining oil in a pan, add the wild garlic and cook for 3–4 minutes on a low heat until it softens. Stir in the potatoes and mustard.

Turn off the heat and stir in the salmon. Serve with the flower heads of the garlic.
