Creamy lemony notes with a mushroom flavour under the rind. Yarg is a moist, slightly crumbly English cheese beautifully wrapped in edible nettles. The nettles used to cover the rind are hand-picked in neighbouring woodland. They are frozen to remove their sting before wrapping the cheese.
Cornish Yarg is made by hand at Lynher Dairies in Cornwall by Catherine Mead. Yarg takes its name from Alan and Jenny Gray who gave the recipe to Pengreep Farm in the 1970s. ‘Yarg’ is simply ‘Gray’ spelt backwards.
Pairs well with dry cider or sparking wine.
