Serves: 2 Preparation time: 10 minutes Cooking time: 14 minutes Shopping List: 250g lean mince beef 75g onion 400g can chopped tomatoes 210g can kidney beans in water 120g brown basmati rice 1. Fry the beef and onion in a non-stick pan until browned. 2. Stir in the tomatoes, kidney beans, seasoning mix and water and simmer for 10-15 mins. 3. Meanwhile cook rice according to pack directions. For a vegan alternative, use a 390g can green lentils instead of beef.
