Preheat oven. Remove absorbent pad and sauce sachet from the tray. Decant the sauce sachet around beef joint. Place in the centre of the oven and cook for the desired time. Due to the natural variability in the thickness of the meat, the cooking instructions provided are a base guide. For thicker joints, additional cooking time may be required. Ensure surface of the meat is thoroughly cooked. Once cooked, cover with foil and allow to rest for 10 minutes before serving. Remove strings and carve. Stir sauce and serve with the beef joint. Do not reheat once cooled. (Time Medium 25-30 mins Well Done 35 - 40 minutes, Oven: 200°C, Fan: 180°C, Gas: Gas Mark 6)
