Oven cook

Preheat oven and baking tray. For best results, brush the pastry with egg yolk, avoiding the air holes. Remove the wellingtons and greaseproof paper from the foil tray. Place the wellingtons on the greaseproof paper onto the preheated baking tray. Place on the top oven shelf and cook as above. Ensure the wellington is piping hot before serving. (Time Medium 16 minutes // Well Done 21 minutes, Oven: 220°C, Fan: 200°C Fan, Gas: Gas Mark 7)
