Preheat oven. Remove all packaging. Place in a roasting tray and in the centre of oven. Once cooked, take the joint from the oven, remove the crackling and cover with foil. Allow to rest for 20 minutes. Place the crackling back in the oven at 180°C (160°C Fan) whilst the joint is resting. (Time 1hr 50 minutes, Oven: 220°C, Fan: 200°C, Gas: Gas Mark gas 7)
