Heat 1 tbsp of oil in a non-stick frying pan. Add meat and cook for 4-5 mins until browned. Add a selection of root vegetables and 400ml stock, bring to the boil. Transfer to an ovenproof dish, cover and place in oven until thoroughly cooked, the juices run clear and the meat is tender. (Time 2-3 hours, Oven: 170°C, Fan: 150°C, Gas: Gas Mark gas 3)
