Madagascan vanilla. Fresh whole milk. 100% natural. With ingredients from natural origins. Created in Italy. Gluten free. Simply the tradition of Italian gelaterie: fresh high quality milk, free range eggs, white cane sugar and only the finest ingredients from Italy and the world. Using only Carob flour as a noble thickener requires that our gelato makers work even more diligently and employ more time in preparing the gelato to be served. We ask you to forgive us if this takes a few extra minutes, but you will be sure that our gelato preparation is taken seriously. We pay extra attention to the dosage of the cream we use, so that the gelato is not too fat, and we add only a little sugar, so that the flavour is not too sweet. For this flavour we use vanilla all the way from Madagascar, in a small area where Bourbon vanilla is produced. We are talking about the famous "Planifolia" vanilla, which requires a longer and more delicate preparation compared to the Tahitensis vanilla. There are two different categories: black vanilla and red vanilla. The first one is known to all lovers of the culinary art: the pod must be soft, easy to cut and with a straightforward and genuine aroma; the black vanilla production (an absolute must at Grom's) represents only a minimum part of the total harvest. It is very difficult to find vanilla gelato made from vanilla beans. Whenever you look for excellence, compromise is necessary - and this is the trick with vanilla. Gently grate the inside of the bean with a blade to remove the small seeds and then place them in warm milk. Add a dollop of an egg yolk, white cane sugar, and voilà! It seems as though no one has the time to perform these delicate, yet simple procedures, but it is this procedure that produces an almost extinct gelato flavour!
