Oven cook

Preheat oven. Remove all packaging from the turkey joint. Place the turkey back in the foil tray provided. Rub the skin with 1 tbsp of vegetable oil, cover loosely with foil and place the foil tray on a baking tray in the centre of the oven. During cooking periodically spoon the juices in the roasting tray over the joint to baste. Remove the foil cover for the final 20 minutes of cooking. 10 minutes before the end of the cooking time, remove from oven, place the glaze over the turkey and return to the oven for the final 10 minutes cooking. Cook thoroughly until the juices run clear. Once cooked, cover with foil and allow to rest for 30 minutes before carving. The cooking juices can be spooned over the 'carved' turkey for extra flavour or added to a gravy. (Time 2 hours 50 minutes, Oven: 170°C, Fan: 150°C, Gas: Gas Mark gas 4)
