Highland beef fillet is naturally tender, succulent and full of flavour. Specially sourced for Christmas, Highland cattle are typically smaller in stature and slow to mature. Highland beef is produced on known farms from cattle bred from registered pedigree Highland bulls.

Remove all packaging. Roast (icon) TYPE TEMP RARE MEDIUM WELL DONE Electric 180°C 30 mins 35 min 40 mins per kg Fan 160°C 30 mins 35 mins 40 mins per kg Gas Mark 4 30 mins 35 mins 40 mins per kg Preheat oven. Place the meat in a roasting tin in a pre-heated oven. Ensure that the surface of the meat is thoroughly cooked. Leave to rest in a warm place for 10-15 mins before carving. Do not reheat once cooled. (Time medium: 35 mins per kg Oven: 180°C, Fan: 160°C, Gas: Gas Mark gas 4)
