We lovingly slow cook our sauces using the same methods and techniques that we use at home, so our sauces have layers of flavour (and a kick of heat!). Create a Madras Chettinad Curry in minutes? So easy, just add protein (meat, chicken, fish, vegetables or pulses), cook serve and enjoy! Bitesize Guide to Madras (Chennai) A rose by any other name'... Madras may now be called Chennai, but South Indian food is still a feast to behold. Although Madras curry was created in British curry houses, we've taken it back to its Chettinad roots in South India so you can enjoy the best of both worlds. The Chettiar people of South India produce some of the spiciest and most aromatic dishes in India, and we've replicated their method of cooking, so you can enjoy this local Madras favourite at home.
