Cooking Instructions Organic Maris Piper is a great all rounder. All appliances vary in performance, the following are guidelines only. To Roast: 50 mins, Electric 220°C, Fan 200°C, Gas 7. Preheat oven. Peel and wash, then cut potatoes into even-sized pieces. Parboil for 10 minutes. Drain then shake the pan to roughen the surfaces of the potatoes. Heat 4 tbsp of vegetable oil in a roasting tin. Add the potatoes and turn in the hot oil. Bake on the top shelf of the oven for 45-50 minutes, until golden brown and crispy. Turn occasionally. To Mash: 20-25 mins Peel (or leave unpeeled for added texture!) and cut into even sized places. Place in a pan with just enough water to cover, add salt if desired and bring to the boil. Cover and simmer for 20-25 minutes or until tender. Drain well and mash with a little butter and milk, or some crème fraîche together with some freshly ground pepper. To Bake: 1-1 1/2 hours, Electric 220°C, Fan 200°C, Gas 7 Preheat the oven. Wash the potatoes well. Dry and prick the skin with a fork. Place directly on to an oven shelf and bake for 1-1 1/2 hours or until the skin is crisp and the flesh tender. To Chip: 50 mins, Electric 200°C, Fan 180°C, Gas 6 Preheat oven. Peel (or leave unpeeled for added texture!) and cut into long pieces in a width of your choice. Spread across a large non-stick baking tray and cover with oil. Roast in the oven for 40-50 mins, giving the tray a shake now and then until chips are golden brown and crisp.
