Oven cook

Preheat 180, 160 Fan. Cook for 2 hrs 15 minutes. After 1 hour drain excess fat into a bowl, repeat again after a further 45 minutes. For the final 10 minutes of cooking time add the quince glaze, draining any remaining fat first. Rest for 30 minutes before carving. Whilst resting drain off and additional cooking juices and fat. Separate juices from all drained fat and use as a base for gravy. Cool leftovers to room temperature, refrigerate within 2 hours, consume within 2 days. (Time 2 hours 15 minutes, Oven: 180, Fan: 160, Gas: Gas Mark 4)
