This flavoursome, grass and forage fed New Zealand lamb is bred for tenderness. This rack of lamb is hand trimmed for leaner meat. At Waitrose & Partners, we only buy meat from farmers we know and trust. Our grass and forage fed Longdown lamb comes from New Zealand farmers who weve chosen for their high standards of animal welfare and their commitment to sustainable farming. The lambs are sired by rams which are carefully selected to produce exceptionally tender lamb, and the meat is matured on the bone for extra flavour and tenderness.

  • Ensure the surface of the meat is thoroughly cooked

Oven cook

Preheat oven. Remove all packaging. Preheat a non-stick frying pan and seal rack on high heat for 2 minutes on each side. Transfer to a roasting tray and place in oven until juices run pink for medium or clear for well-done. Cover with foil and rest in a warm place for 5 minutes before carving. Add "ROAST 20-22 mins" on FOP (Time Medium 15-17mins; well done 20-22mins, Oven: 190°C, Fan: 170°C, Gas: Gas Mark gas 5)
