    Preparation and Usage

    You will need: 1 medium egg 80g unsalted cubed butter 190ml water Extra flour for dusting Egg or milk to glaze 7cm cutter Paul's Top Tips To customise: Add a handful of dried fruit and/or the zest of an orange to the dry mix for extra flavour. Cutting: Be careful not to roll your dough too thin, and remember not to twist when cutting your rounds as you want a nice tall scone with a clean edge. To serve: Serve with good quality jam and a dollop of clotted cream. 1 Pre-heat the oven (220°C / 200°C Fan / Gas Mark 7) and line a baking tray with non-stick baking paper. In a large bowl, rub the butter into the scone mix to give a breadcrumb-like texture. 2 Mix in the egg and half the water. Gradually add the remaining water to form a soft dough. On a floured work surface fold the dough in half then turn 90 degrees. Repeat this folding and turning 3 times. Be careful not to overwork your dough. 3 Roll the dough to 2.5cm/1 inch thick. Using your cutter, stamp out rounds and place them on to a lined baking tray. Any leftover dough can be worked and rolled again. 4 Brush the tops with egg or milk to glaze and bake on the middle shelf of the oven for 15 minutes, or until risen and golden brown. Leave to cool, split in half and serve with you favourite fillings. And there you have it - My Famous Scones!
