Preparation and Usage
1. Cook the Rice Cook the rice as per pack instructions. 2. Make the Curry Base Heat a little oil in a pan over medium-high heat and fry the red pepper for 2 mins. Mix in the Garlic Paste Add a spoonful of coconut milk (the creamy part) to the pan and then add the Thai Red Paste. Stir fry for 2 mins then add the rest of the coconut milk. 3. Add the Veg Add the tomatoes and bring it to the boil, then reduce the heat to medium and cook for 5 mins. Stir in the Thai Red Garnish. Add the prawns and cook for 1 min. Or if using raw prawns, cook for 3-4 mins, until they turn pink. Serve! Stir in most of the basil (optional) and add sugar and lime juice to taste. Serve the curry over rice with extra basil on top. Enjoy
