INGREDIENTS: pork (87%), demerara sugar, pomegranate juice from concentrate, salt, tamarind paste, water, rosemary, sugar, caramelised sugar syrup, cornflour, preservatives (sodium nitrite, potassium nitrate), antioxidant (sodium ascorbate), lemon juice from concentrate.

Preheat oven. Remove rosemary sprigs and place on a foil lined tray. Place gammon on top of rosemary sprigs. Place tray in the centre of the oven and cook for 30-50 minutes. Remove the tray from the oven and drizzle the tamarind and pomegranate glaze over the gammon. Return to the oven and cook for a further 30 minutes. Cook thoroughly until the juices run clear. Leave to rest before carving. Cool leftovers to room temperature, refrigerate within two hours. (Time 1 hr 20 mins, Oven: 200, Fan: 180, Gas: Gas Mark 6)
