An easy to carve sweet cured gammon joint, incorporating modern flavour profiles of tamarind and pomegranate within the sauce to create a subtle sweet flavour. It's a new twist on the traditional sugar-glazed gammon which works beautifully and is sure to intrigue and delight guests.

The joint is banded to form a paupiette which is easy to carve, and decorated with a rosemary garland - a pretty centrepiece on your table.

Produced from Prime British pork, from pigs born outdoors and reared in airy, straw-bedded barns.

Oven cook

Preheat oven. Remove rosemary sprigs and place on a foil lined tray. Place gammon on top of rosemary sprigs. Place tray in the centre of the oven and cook for 30-50 minutes. Remove the tray from the oven and drizzle the tamarind and pomegranate glaze over the gammon. Return to the oven and cook for a further 30 minutes. Cook thoroughly until the juices run clear. Leave to rest before carving. Cool leftovers to room temperature, refrigerate within two hours. (Time 1 hr 20 mins, Oven: 200, Fan: 180, Gas: Gas Mark 6)
