Preparation: Wash hands, all surfaces and utensils after touching raw meat. Defrost thoroughly before cooking.

Roast: Gas 4, 180°C, Fan 160°CMedium: 25 mins per 500g + 25 minsWell Done: 30 mins per 500g + 30 minsPreheat oven. Remove all packaging. Allow the lamb to rest for 10 minutes to enable the colour to return and any containment odour to disappear. This does not affect the quality of the lamb. Place lamb in a roasting tray in centre of oven. Ensure surface of meat is thoroughly cooked. Leave to rest for 10-15 minutes before carving.
