Preheat oven. Place joint into cooking pot and cover with stock, replace the lid and place into the centre of the oven. Cook for 2 to 2½ hrs until the joint is tender. Remove the joint from the pot and rest for 10 minutes before carving. (Time 2 to 2½ hrs Oven: 180°C, Fan: 160°C, Gas: Gas Mark gas 4)
