Awarded a Gold medal and Best New Cheese at the 2014 British Cheese Awards, it's safe to say Cote Hill Lindum announced its arrival to the world of cheese with a bang. But that's little surprise when you consider its pedigree. Michael and Mary Davenport have been farming and milking cows at their Cote Hill Farm in Lincolnshire for over 30 years. In October 2005 they started using milk produced by their herd of 70 Friesian, Holstein and Red Poll cows to make a range of exceptional cheese - and our Waitrose 1 example gives you a pure, character-driven expression of their skill. Michael milks the cows twice a day and Mary uses the morning milk to make cheese. During the summer the cows graze the clover-rich pasture and in the winter they eat grass with red clover haylage - all grown on the farm. This care and attention creates award-winning milk that is rich in butterfat and protein. The unpasteurised milk gives the cheese an individuality that makes the cheese of Cote Hill Farm so very special.
Washed in local beer giving the rind a wonderful nuttiness, complementing the mellow centre. Peel and reveal; Michael and Mary Davenport have been farming at Cote Hill Farm in Lincolnshire for more than 30 years. The rich morning milk is sent straight into the dairy to begin the cheesemaking. The young cheeses are washed with local Bomber County Ale creating a pale blush rind, which over the maturation period develops the cheese's depth of flavour and complex aroma
