Preheat oven. Remove all packaging. Line roasting tray with foil. Place rack in lined roasting tray uncovered in the centre of the oven until juices run pink for medium or clear for well-done. Ensure the surface of the meat is thoroughly cooked. Cover with foil and rest in a warm place for 5 minutes before carving. (Time Medium - 30-35 minutes, Well Done 35-40 minutes, Oven: 190, Fan: 170, Gas: Gas Mark 5)
