Italy's answer to France's Roquefort...

This Italian icon was developed around the same time as Roquefort and enjoys legendary status. Here we bring you a fantastic example. A soft, blue cheese made with uncooked cow’s whole milk, the Piccante ('spicy') version has a greater amount of the blue greenish mould compared to Gorgonzola Dolce. As you'll find, the extra blue doesn't add 'spiciness' but incredible depth, with a penetrating and intense, tangy character.

Gorgonzola is one of the oldest blue cheeses in the world and it's beginnings are unclear, but legend has it a young shepherd was distracted by his lady love and left his cheese curds to drain overnight. Upon his return he mixed these curds in with the morning curd but it did little to hide his 'mistake'. Weeks later his cheese was streaked with blue and a delicious discovery was born.

Enjoy this strong cheese with pear and walnuts, a dash of runny honey or simply with a cracker or bread. You can even crumble a little into a risotto near the end of cooking for serious comfort food.
