INGREDIENTS: pork (73%), cream (milk), water, Madeira wine (6%), mustard seeds, thyme, spirit vinegar, cornflour, concentrated lemon juice, black pepper, salt, onion, carrot, tomato purée, garlic, rosemary, black peppercorns, bay leaf, stabiliser (carrageenan), preservatives (potassium metabisulphite and sodium metabisulphite).

Preheat oven. Remove all packaging and set aside the sauce sachet for later. Heat 1 tsp of oil in a frying pan and sear the fillet on a medium to high heat for 2-3 minutes turning to seal the whole surface of the meat. Remove the fillet from the pan and set the pan aside for later. Place the fillet on a preheated baking tray in the centre of the oven and cook for 20 minutes. Cook thoroughly until the juices run clear and there is no pink meat. Rest for 5 minutes before carving. Gently heat the sauce in the frying pan on a low heat until it begins to bubble. Drizzle sauce over the sliced fillet to serve. (Time 25, Oven: 200, Fan: 180, Gas: Gas Mark 6)
