Preheat oven. …Place in a roasting tin in centre of oven. Ensure the surface of the meat is thoroughly cooked. Leave to rest in a warm place for 10 mins before carving. …Cooks Tip: Seal joint for 3-4 minutes in a hot frying pan, turning occasionally. Then cook as above.
