  • Chilli rating: Hot. Prep time: 40 mins. Cooking time: 15 mins. Serves: 4. My shopping list.... 6 Chicken thigh fillets (skinless & boneless). 1 Lemon. 3 tbsp Olive Oil. 4 tsp of Piri Piri Rub. Preparation. Cut the chicken into strips and place into a bowl. Mix in 4 tsp of Piri Piri Rub and 2 tbsp olive oil. Squeeze in half the juice of the lemon. Mix thoroughly and leave to marinade for approximately 30 minutes. Cooking Instructions. 1. Heat 1 tbsp Olive oil in a large non-stick pan over a medium heat. 2. Then add the marinated chicken and stir fry of 10 -15 minutes. 3. Now squeeze the rest of the juice of the lemon on to the chicken and stir. Cook until the chicken is tender - check seasoning before serving.. Tip: If the dish becomes too dry add a few tablespoons of warm water and stir.
