Preheat oven. Remove all packaging. Allow the lamb to rest for 10 minutes to enable the colour to return and any containment odour to disappear. This does not affect the quality of the lamb. Place in a roasting tray in centre of oven. Leave to rest in a warm place 10 minutes before carving.
