Preheat oven. Remove all packaging. Place in a deep roasting tray and cover with foil in the centre of the oven. For the last 30 mins of cooking time remove the foil. Cook thoroughly until the juices run clear and there is no pink meat. Cover with foil and rest for 10 - 20mins before pulling apart the meat with forks. (Time 60 mins per 500g + 60 mins, Oven: 160°C, Fan: 140°C, Gas: Gas Mark gas 2 1/2)
