Preheat oven to GAS 4, 180°C, FAN 160°C …Remove all packaging. Place guinea fowl upside down in a roasting tray in centre of the oven, half way through cooking, turn onto the other side and reduce heat to 170°c / Gas mark 3 (150°c for fan oven). Cook thoroughly until juices run clear and there is no pink meat. Stand for 10 minutes before carving. Do not reheat once cooled. (Time 1 Hour 20 mins)
