Pork shoulder slow cooked with a seasoned sea salt and black pepper rub with a sachet of sweet spiced sauce.

Outdoor bred pork rubbed with sea salt and black pepper and slow cooked for 10 hours so the meat is tender, with a rich, sticky spiced date sauce. Simply finish in the oven - it's ready in 25 minutes and serves two. Delicious with a saffron rice pilaff, spiced with ras-el-hanout and speckled with raisins, pomegranate seeds, sundried tomatoes and olives. Higher welfare. Preheat oven. Empty meat and liquor into an ovenproof dish, and cover with foil. Cook for 20 minutes. Remove foil and drain off liquor. Pour contents of sauce sachet over meat, and cook for a further 5 minutes. Serve. (Time 25 mins, Oven: 200°C, Fan: 180°C, Gas: Gas Mark 6)
