Classic basil pesto

Use this classic basil pesto as a base to experiment. Swap in other soft herbs and any nuts that need using up instead of pine nuts.

Ingredients

  • 1 clove/s garlic
  • 25g pack basil
  • 50ml extra virgin olive oil
  • ½ lemon
  • 25g pine nuts, toasted
  • 50g Essential Parmigiano Reggiano

Method

  1. Use a pestle and mortar or food processor to crush together the garlic, basil and a pinch of salt. Add the extra virgin olive oil, lemon juice and toasted pine nuts, then mix. Finally, add the grated Parmigiano Reggiano and combine.
