• 1 Duchy Organic Cauliflower • 5 dried apricots, finely chopped • 1 tsp cumin seeds • 1 tsp ground coriander • 3 tbsp extra virgin olive oil • 2 heaped tbsp harissa • 75g unsalted butter, softened • 250g Greek yogurt • 2 cloves garlic, finely grated • 1 unwaxed lemon, zest and juice • ½ x 25g pack flat leaf parsley, leaves roughly chopped • ½ x 28g pack coriander, leaves roughly chopped
