MEAL MATHS - BEEF & KIMCHI RICE BOWL

Ready in 35 minutes | Serves 2

SCROLL DOWN TO ADD INGREDIENTS

1. Open the stir fry pack and separate into 4 piles – carrots and mangetout; coriander; grated ginger; and cabbage, pak choi, baby corn and salad onions. 

2. Mix the steak and kimchi paste with the grated ginger. If there is time, cover and leave to marinate for 30 minutes. When ready to serve, cook the rice according to pack instructions, then divide between two bowls. 

3. Meanwhile, warm 1 tbsp sunflower oil in a nonstick frying pan over a high heat. Stir fry the carrots and mangetout for 2 minutes, then divide between the two bowls. Repeat with the cabbage, pak choi, baby corn and salad onions. Add 1 tbsp more to the empty pan and stir-fry the beef for 2 minutes. 

4. Divide between the bowls, scatter over the coriander and serve immediately.
