1. Preheat the oven to 200 C, gas mark 6. Heat 1 tbsp olive oil in a large frying pan, add the mushrooms, season and fry, pouring off any excess liquid.
2. Continue to fry for 10-12 minutes until any excess moisture has evaporated and the mushrooms are beginning to brown.
3. Tip the mushrooms into a small ovenproof dish, shred in the chicken and stir through the mushroom sauce. Sprinkle with the stuffing, drizzle with a little oil and bake for 20-25 minutes, or until gold and bubbling.
