MEAL MATHS - ZAATAR AUBERGINES

Ready in 35 minutes | Serves 2

SCROLL DOWN TO ADD INGREDIENTS

1. Slice the aubergines in ½ lengthways and score the flesh, or cut into large pieces.

2. Mix 2 tsp of the zaatar with 1 tbsp olive oil and a generous pinch of salt, then spoon over the aubergines. Place them on a baking tray and roast in a preheated oven at 200℃, gas mark 6 for 30-35 minutes.

3. Meanwhile, cook the couscous according to pack instructions. Mix the remaining 1 tsp zaatar with the houmous and spoon onto 2 plates. Add the couscous and top with aubergines. Sprinkle over a little extra zaatar to garnish, if liked.
