Scum

An inedible layer that appears on the surface of food that has been heated such as home-made stock or jam. Scum should be removed either during or at the end of the cooking time, eg bring the beef stock ingredients to the boil and remove any scum, remove any scum from the jam with a slotted spoon and then pot and cover.
