    Amaretti stuffed peaches

    • 4 Waitrose Perfectly Ripe Yellow Flesh Peaches, halved and stoned
    • 8 amaretti biscuits, crushed
    • 4 tbsp mascarpone
    • 2 tbsp brandy or orange juice


    1. Preheat the oven to 200°C, gas mark 6. Arrange the halved peaches cut side up in a shallow ovenproof dish to fit snugly. Mix the biscuits with the mascarpone. Spoon into the cavity of the peaches and sprinkle with the brandy or orange juice.
    2. Bake for 15–20 minutes until tender and serve warm or cold with vanilla ice cream.
