    Apple and Apricot Stuffing

    • Total time: 50 minutes 50 minutes

    Serves: 10


    • 1 tbsp vegetable oil
    • 1 onion, chopped
    • 450g sausagemeat
    • 50g fresh white breadcrumbs
    • 1 cooking apple, peeled, cored and grated
    • 50g dried apricots, finely chopped
    • 2 sticks celery, finely chopped
    • 100g cooked chestnuts, roughly chopped
    • 1 tbsp finely chopped parsley
    • 1 tbsp finely chopped sage
    • 1 medium egg, beaten
    • Salt and freshly ground black pepper


    1. Heat the oil in a pan over a medium heat. Add the onion and sauté for 5 minutes or until soft. Tip into a large bowl.
    2. Add all the remaining ingredients and stir until evenly mixed - it's often easiest to do this with your hands. Shape the mixture into 20 even balls. Put in a greased baking dish and bake at 190°C, gas mark 5, for 25 minutes. Serve hot.
