    Apple In-And-Out

    • Preparation time: 30 minutes
    • Cooking time: 75 minutes
    • Total time: 1 hour 45 minutes 60 minutes 45 minutes

    Serves: 6 - 8

    • 250g butter, softened, plus extra for greasing
    • 250g soft light brown sugar
    • 2 large eggs
    • 200ml milk
    • 500g self-raising flour
    • Pinch of ground cloves
    • 1kg cooking apples, such as Bramley, peeled, cored and roughly chopped

    1. Preheat the oven to 180°C, gas mark 4 and butter a baking dish measuring roughly 30 x 30cm.
    2. Cream the butter and sugar together until light and fluffy. Add the eggs, one at a time, and beat until combined. Mix in the milk, then fold in the flour and cloves. Fold in the apples.
    3. Tip into the dish. Spread the mixture out but leave the surface quite uneven. Bake for 1¼ hours or until a skewer comes out clean. Cover with baking parchment if it starts to brown too much. Serve hot with cream and extra sugar.
