Baked red cabbage with sloe gin & juniper

Serves: 6 (with leftovers)
1 tbsp vegetable oil
25g unsalted butter
2 red onions, sliced
1 small red cabbage, finely sliced
1 Bramley apple, peeled, cored and coarsely grated
1 large cinnamon stick
2 star anise
1 tsp juniper berries, crushed
11⁄2 tsp sea salt flakes
4 tbsp red wine vinegar
5 tbsp light brown soft sugar
100ml sloe gin (or red wine or port)
1. Preheat the oven to 150ºC, gas mark 2. Heat the oil and butter in a large ovenproof casserole dish over a medium heat.
2. Add the onions and cabbage and fry gently for 5 minutes, stirring frequently. Stir in the remaining ingredients and 200ml water.
3. Cover and bake for 1 hour 45 minutes, stirring every 30 minutes and adding extra water if it looks dry, until tender and the liquid has evaporated.
4. Remove the cinnamon and star anise before serving hot or cold.
