Baked pecan and maple apples

2 essential Waitrose Bramley apples (about 450g)
25g pecans, finely chopped
25g essential Waitrose sultanas
Zest of 1 essential Waitrose lemon
2 tbsp light brown muscovado sugar
2 tbsp maple syrup
1. Preheat the oven to 180ºC, gas mark 4. Remove the central core, about 3cm in diameter, leaving the apples whole and place in a small baking tin or loaf tin.
2. Mix the pecans, sultanas, lemon zest and sugar together and fill the apple cavities, sprinkling any remaining mix over the top. Drizzle over the maple syrup and bake for 25–30 minutes until the apples are tender.
