    Blackberry and Lime Cordial

    Sweet, inky and utterly delicious, this fruity cordial is every bit as delightful as it looks. Dilute it to taste with still or fizzy water and served with lots of ice and fresh mint to make an amazingly refreshing drink.

    • Preparation time: 25 minutes, plus cooling
    • Cooking time: 10 minutes, plus cooling
    • Total time: 35 minutes, plus cooling 35 minutes

    Makes: 1 litre


    • 1kg blackberries
    • 600ml water
    • Juice of 4 limes
    • 350g caster sugar


    1. Put the blackberries, water and lime juice in a saucepan and simmer over a gentle heat for about 15 minutes, until the blackberries are very soft. Leave to cool for 10 minutes or so, then push the mixture through a sieve lined with muslin or a clean jay-cloth to extract as much juice as possible while excluding the pips.
    2. Put the strained juice in a clean pan and add the sugar. Stir over a gentle heat until the sugar has dissolved and then simmer for 5 minutes or until syrupy. Pour into sterilised bottles, seal and store in a cool place.
