Serves: 1, or scale up to suit your event
25ml lemon juice
15ml simple syrup (see below)
1. Add the gin, lemon juice and simple syrup to a rocks glass. Half-fill with crushed ice and churn with a spoon until diluted. Fill the glass to the top with more crushed ice. Drizzle the cassis on the top.
To make a simple syrup, heat equal parts sugar and water on a low heat, stirring occasionally until the sugar has dissolved. Allow to cool.
